Thai Marinated Steak + A Trick

This is legitimately the BEST marinade I have ever made, so I cannot do anything except share it with y’all. I literally just made it and crushed the steak, and am turning around and blogging it straight to you guys because it is THAT necessary.


Marinades are one of the most time-friendly ways to create an awesome, flavorful meal without a lot of work. And to save time with dishes, I have a quick trick that I love for marinades. Instead of adding all the ingredients to a bowl and mixing them, and then adding the meat, I add all of the marinade ingredients straight to a ziploc bag and then add the meat.  It’s easy to mash all the ingredients together and get the meat covered in marinade once you seal the ziploc bag and shake it up. Boom. No dishes.

I adapted this marinade out of a Satay Skewer recipe I found in my 21 Day Sugar Detox cookbook. Let’s be honest, skewers are cute but who has the time. Soak the sticks overnight in water? girl bye. Nobody has time for that. So I adapted the recipe and made it my own a bit.

I let my steak marinade for about 90 minutes. I put the steak in the ziploc bag, went to the 4PM class at CrossFit, and then grilled it when I got back. I would say if you can do at least 30 minutes that works, but the longer the better.

To clarify, I did 4PM Accelerator class (our “CrossFit Lite” version of class without heavy barbell work). I don’t do Fran. Fran and I got in a hysterical melt down screaming match about 3 years ago and it has scarred me for life. Seriously, don’t ask me about it.

1/2 large stalk lemongrass, sliced (appx. 2 tablespoons)

1/4 cup sliced shallots

2 cloves of garlic, minced

pinch of red pepper flakes

1/2 teaspoon fresh ginger, minced

1 tsp curry powder

1 tsp ground coriander

1 tsp ground cumin

3 tablespoons coconut aminos

4 tablespoons fish sauce

1/4 cup full fat, canned coconut milk

sea salt & black pepper to taste

1lb. flank steak


1. Mix all ingredients together in a plastic ziploc bag.


2. Slice your flank steak against the grain into strips.

3. Place steak inside ziploc bag, and shake/mash marinade into the steak.


4. Leave it for 30+ minutes.

5. Heat up your girl to medium-high heat, and grill for appx. 5 minutes on each side, or until done to your liking.
